Ingredients

1 ½ cup oat flour

½ cup strawberries

1 cup water

1 egg
-
1 tsp baking powder
-
¼ cup melted coconut oil
-
Greek yogurt
-
Diced strawberries

Directions
Preheat oven to 350° F. Grease a cupcake pan with coconut oil.
In a blender, blend the strawberries and water until combined.
In large mixing bowl add the strawberry mixture, egg, and coconut oil. Mix ingredients until combined. Add oat flour and baking powder to the bowl and mix until combined.
Add 2-3 scoops of batter in each cupcake tin, filling 1/2-2/3 of the way full. Bake 20 minutes, until just set. Remove and let cool 10 minutes, then run a knife around the edges to release, and invert the pan.
Slice the pupcake in half horizontally creating two even layered pupcakes.
Time to assemble! On one half of the pupcake add a layer of greek yogurt, diced strawberries, then crumbled Dog is Human multivitamin. Top it off with a dollop of peanut butter.
Layer the second half of the pupacake on top and repeat step #5.
